Spiced Apple Pancakes

Let’s start with the most important meal of the day: breakfast! With so many schools engaging in distance learning this school year, there’s no reason that pancakes have to be a weekend specialty. This recipe is so simple your kids could even make it for you!

Ingredients:

  • 1 1/3 cup all-purpose flour

  • 1 1/2 tsp baking powder

  • 1 1/2 tsp cinnamon, divided

  • 1 tbsp granulated sugar

  • 1/2 tsp kosher salt

  • 1/2 cup brown sugar

  • 4 tbsp butter, divided (set aside a little extra for cooking)

  • 1 egg, separated

  • 1 tsp vanilla extract

  • 1 1/4 cup milk

  • 4 large apples, peeled, cored, and chopped

Prep Time: 15 minutes

Total Time: 45 minutes

Savory Pumpkin Soup

What’s more season than pumpkin spice lattes? Probably nothing. But pumpkin soup comes in a close second place! Savory soups are a great fall food—filling, and with just the right amount of warmth, this soup is made with pumpkin puree meaning won’t affect your garbage disposal impellers!

Ingredients:

  • 1/4 cup olive oil

  • 1 tbsp chili powder

  • 2 tsp dried oregano

  • Kosher salt and freshly ground black pepper for taste

  • 1 sweet onion, chopped

  • 1 red bell pepper, seeded and chopped

  • 2 cloves garlic, chopped

  • 2 (15-ounce) cans of pure pumpkin puree

  • 2 quarts vegetable broth

  • 3 tbsp fresh lime juice

Total Time: 1 hour 5 minutes

Strip Steak with Lemon Mashed Potatoes

This quick and easy dinner seems like a fancy feast, but with such a short prep time it’s a quick meal for any day of the week! Plus, since this cut of meat is typically made from one muscle strip steak doesn’t have bones and there’s little connective tissue (or fat)!

Ingredients:

  • 1 1/2 lb. Yukon gold potatoes, peeled and cut into 2-inch chunks

  • Kosher salt and freshly ground black pepper for taste

  • 1 cup fresh or frozen peas

  • 2 tsp lemon zest

  • 2 tablespoons lemon juice

  • 3 tbsp olive oil, divided

  • 2 (3/4-inch-thick) strip steaks

  • 2 small shallots, thinly sliced

  • 1/2 cup dry white wine

  • 1 1/2 tbsp unsalted butter

Total Time: 30 minutes
